Living the Cream Biscoffus Maximus
Living the Cream is a small business out of Buffalo. The guy is churning up some masterpieces out of his own kitchen. I luckily found him off Instagram due to his love of eating America's finest ice cream. His homemade ice cream has a lot of praise due to the fact he makes everything from scratch.
Biscoff Maximus is labeled as "Biscoff Ice Cream, Biscoff Crunch, Cinnamon Biscoff Gooey Butter Cake, and Biscoff cookie swirls."
The base ice cream is pure gold when it comes to replicating speculoos. My best comparison would be taking Trader Joes Cookie Butter and enhancing the density. The rich and creamy base provides an exotic flavor that smothers your taste buds with hints of gingersnap cookies and spices.
The biscoff crunch is similar to balls of no-bake cookies but enhanced with cookie butter. The butter cake is moist, dense, and packed with a luscious aftertaste. The texture of the mix-ins is incredibly soft and provides the perfect chewiness to compliment the thick base. It is amazing how fresh these butter cake pieces can be even when frozen in ice cream. The biscoff cookie swirls are thick from top to bottom. They are on the harder side similar to Living The Cream's peanut butter swirls. I would personally like them a bit softer and gooey, but that may be very hard when folded into ice cream.
This is one for the biscoff, gingersnap, and ginger lovers. With so much cookie butter going on in one pint it may become monotonous with one single element shining in such a large portion. I really liked this one, but would be in favor of improving the texture of the swirl.
