Salt and Straw Pots of Gold and Rainbows
From Salt & Straw's Website: A technicolor flavor trip to days past where Saturday morning cartoons blaze in the background as you pour yourself a fresh bowl of Lucky Charms. After meticulously sorting hundreds of pounds of lucky marshmallow “charms” from their less lucky whole grain counterparts, we steep the cereal in cream overnight to get that yummy cereal base. Then, we stir the mallows back in so they can bask in the greatness that is this ice cream!
The base of this ice cream seemed to be a marshmallow base. After a few bites it really reminded me of drinking the milk after a bowl of cereal. It did have a luscious marshmallow flavor, but not overpowering to the point it is too sweet. The base did not give me the full toasted marshmallow flavor like I found in wegmans, but had the sweet vanilla flavor like found in Graeter's. it was really hard to truly pinpoint this base, but they did a great job not making it too strong, nor too weak. It found the happy medium for a sweet cream taste and a very rich vanilla.
What is Pots of Gold and Rainbows known for? Lucky Charms cereal. That is right, you literally got chunks of lucky charms marshmallows in each and every bite. Enjoy the blue rainbows in lucky charms? I got about 6 of them through this pint. The additional color of the rainbows and the marshmallows were scattered throughout this experience really enhancing this for those who love very sweet desserts. Salt & Straw kept the mix-ins simple, but did them great. Its amazing how they are super soft like they were soaking in milk for a few minutes.

Too bad this flavor was only around as a March exclusive to Salt & Straw. Many may argue their favorite cereal of all-time, but its hard pressed to find a company who can duplicate that into an ice cream.
