Caffe Panna Wholly Cannoli
CaffePanna's goal is to bring that same welcoming spirit and all-day accessibility to the heart of New York City, with an emphasis on delicious ice cream that marries elements of both Italian and American traditions.
Wholly Cannoli is labeled as " A wholly cannoli experience. Our favorite Italian bakery in NYC is Settepani Bakery and their cannolis are superb! The base ice cream of this pint is kissed with Sicilian pistachios and mascarpone for added richness. Then we swirl in cannoli filling and freshly baked pistachio coated cannoli shells."
Mascarpone is used in many Italian desserts that contain coffee or chocolate. The rich, buttery texture comes from the high butterfat content (up to 75 percent), which is why it is used as a filling for the actual cannoli pastry. or used as a filling for real cannoli's. It is cream cheese. The Sicilian pistachios provide a slight earthly flavor that tickles your taste buds. This is not an overpowering flavor by any means but shines just enough to let the mix-ins do the talking.
The cannoli shells give the ideal graham cracker flavor that is found in the base of Gingie's Pie. The cinnamon, brown sugar, and molasses flavors are all found in the shell, which provides the correct crunchy texture that pairs with the creamy and dense ice cream. The little bit of swirl I had is the ideal ricotta flavor found in a filling of a cannoli. Even though ricotta does not possess a lot of flavors, Caffe Panna found a way to sweeten this inclusion to really pop on your taste buds. The extra cinnamon amplifies the cannoli shells that are crushed from top to bottom.
Wholly Cannoli is the ideal replica of a Cannoli flavor due to the collaboration with Settepani Bakery. The Sicilian pistachio is what takes this pint to another level. With a larger presence of the swirl this could of have had better potential, but a good scoop none the less.
