Caffe Panna Apples & Cheeses
CaffePanna's goal is to bring that same welcoming spirit and all-day accessibility to the heart of New York City, with an emphasis on delicious ice cream that marries elements of both Italian and American traditions.
Apples & Cheeses is labeled as "Black pepper pecorino Romano ice cream with market apple swirl and a touch of saba"
Pecorino is an ideal grating cheese. It is firm enough to hold up to a Microplane, but rich enough to melt into any number of pasta dishes you might use it with. The cheesy base has an underlying black pepper taste that is noted, but not overpowering. For some individuals, cheese is not their highest priority when it comes to being infused into a dairy dessert. I will tell you one thing, the quality Caffe Panna brings to their ice cream with their raw materials shines with how much flavor and density it provides. The cheese base is incredibly soft, which provides the proper creamy texture.
Saba is a very unique addition to the pecorino base. Saba is an Italian syrup made from cooking down grape must. It has a balsamic taste to it that is used by chefs in their menu's at top-end restaurants. Cheese and saba go together like peanut butter and jelly. These both provide a taste to complement each other. The market apple swirl is divine. The apple swirl has a gooey texture like apple pie filling, but with a very pure taste and hints of spices. The cinnamon and clove are lingering and such a small part of the backend. They do not overpower the cheesy base and saba addition, but they help balance the amount of flavor provided in this experience.
While this is my least favorite of the pack, it may be a favorite to others. I went into this one with an open mind as I am not a cheesy ice cream fan, but I can see this appealing to a different target market. The apple butter swirl is great, and I hope to see it included in future flavors.
