Graeter's Honeycomb
Graeter's Honeycomb is labeled as "sweet and honeyed molasses honeycomb candy ice cream with crunchy honeycomb candy pieces." Honeycomb is a very unique flavor because these contain both an unrefined base and mix-ins. Graeter's is known for their signature chips, but they are totally branching off into a new realm. After searching their bakery I do not see anything that contains honeycomb pieces, so I am curious where the idea came from. None the less I am interested to see just how good they can put together a flavor that is very uncommon to the brand.
The sweet and honeyed molasses base sounds very unique, but the execution is where it falls short. Upon my first bite you do pick up on the sweet honey flavor, but the depth of the molasses is no where to be found. While the ice cream is creamy, dense, and high in buttermilk fat the flavor is lost. The more I consumed the cone the more it tasted like a subtle honey flavor. I spoke to someone else in the shop when I got my cone and they had the same thoughts as me that is just needed more for it to up to Graeter's standards.
The crunchy honeycomb candy pieces were large, packed a nice crunch, and enhanced the base ice cream. When I think of honeycomb cereal I was expected to taste a buttery undertone, but that was not the case. The outside honey’s subtly thick sweetness amplifies what the base is lacking. As you bite into the mix-ins the core floured, flavor diminishes rather fast as it tastes like an icy glazed cereal chunk. After having a few mix-ins I noted this was the case for all of them, as they all did not have enough oomph to make them stand out.
I may come off a little harsh on this review, but both the base and mix-ins need to be worked on. The amount of flavor density never kicked in and it seemed subpar to a Graeter's bonus flavor. I personally love the idea, but the execution fell short. If I were to make any change I would bump up the saltiness in the base and enhance the molasses aftertaste. The mix-ins need to provide more flavor to compliment the base. All in all a unique flavor, but so far my least favorite on the bonus flavors.
