Graeter's Brown Butter Bourbon Pecan is labeled as "Bourbon glazed pecan pieces in brown butter bourbon ice cream". Before we get into the review this is the first time Graeter's has used brown butter as a base feature. Brown butter is made by cooking unsalted butter long enough to turn the milk solids brown while cooking out any water present in the butter.The company thrives off quality ice cream made with the french pot process and massive Peter's Chocolate Chunks. Graeter's has now brought out a limited edition flavor for April that will last until the supply runs out. This flavor is replacing Bourbon Pecan Chocolate Chip that was discontinued in 2018 by adding a brown butter element to the base.
Right off the bat the base is not as dense as a usual Graeter's flavor. The reasoning behind that is due to the added bourbon in the base.. Just like Bourbon Pecan Chocolate Chip you will find a creamier and softer ice cream that melts on your spoon pulling it right out of the freezer. The brown butter element is unique and the perfect compliment to a pecan filled pint. The richness of the butter is paired with a toasted flavor that has a nutty bite to it. Due to having such a high buttermilk fat the ice cream balance of booze and brown butter is dead on delicious. Similar to Jeni's Rumball, Ben & Jerry's Salted Caramel Brownie Ale, and the Haagen Dazs Spirits line of ice cream the hint of bourbon found in this flavor is there as an aftertaste. It is not the dominant portion of the pint, which is a huge plus for me.
The bourbon glazed pecan pieces are the sole mix in during this scoop. One thing you will note is the amount of saltiness they bring to the table, which is a major plus to enhancing the flavor of the ice cream. The crunchy pecans linger with bourbon to further enhance the booze found in the base of the ice cream. The pecans are no exception just like the chocolate chips with how big they are in size. As I ventured down my pint I got large chunks that surpassed my experiences with its preceding flavor. One thing I have noticed is when a Graeter's flavor gets a second mix-in they both tend to be smaller in size.
I hope to see Graeter's utilize the brown butter base in the future because it was absolutely fire from the very first bite. While this flavor looks basic on paper the company knows how to execute a high quality ice cream. I am not the biggest drinker, but the booze should not turn you away from trying this limited edition flavor. Brown Butter Bourbon Pecan will be sold in scoop shops and the online store for a very short time until stock runs out. Act quick or you may miss your opportunity.
