High Road Caramel Pecan
This is my first venture into High Road's ice creams after a fantastic experience with their cookies. High Road Ice Cream is a craft, premium ice cream. Many ice cream companies begin with commercially available bases or have a dairy make a base for them. High Road makes their own and has 10 different bases that Chef Schroeder and his team created, depending on the desired result.
High Road Caramel Pecan is labeled as "Praline pecans and caramel in our brown butter caramel ice cream." From my first bite, you can taste every element of butter, sweet, and salty as you would expect from a brown butter base. I had visions of Jeni's OG Brown Butter Almond Brittle pint when I took my first scoop of this flavor. With 16% buttermilk fat you have to realize how dense and rich this ice cream will be. The creaminess as the base begins to melt just adds the icing on the cake to the complimenting mix-ins.
The two mix-ins provided in High Road's Caramel Pecan is pecans and a caramel swirl. The praline pecans are delicious and offered a great textural contrast when paired with the smooth base and silky caramel swirl. The one downfall to nuts is they can be too large in ice cream cause them to be very hard to chew and breakup during your experience, that was not the case here. The star of the show was the caramel swirl. The thickness and consistency of the swirl were present after breaching the surface. The buttery richness and luscious flavor just added to the already heavy base to amplify the experience. There were some portions in the pint where I got pools of caramel instead of ribbons that were swirled along the outside
When you take a very simple flavor on paper and execute it very well you know you have done well. When you combine all three elements together the pint flows very well as all the flavors go hand in hand. I am not a huge fan of nuts in ice cream, but this was the correct choice to pair with the fantastic base and massive swirl. All in all a very good first experience with High Road.
