Clementines Italian Butter Cookie
Clementines Italian Butter Cookie is labeled as "Speculoos Cookie Butter base with Italian Butter Cookies". Speculoos is Belgian cookies with great crunch, and a slightly caramelized, almost-but-not-quite-gingerbread flavor. I have only had a select few speculoos flavors in the past, and to be honest most of them were average at best. Clementine's has always brought special ice cream bases to the market, so here arises a new challenger.
The base ice cream is pure gold when it comes to replicating speculoos. My best comparison would be taking Trader Joes Cookie Butter and enhancing the density. The rich and creamy base provides an exotic flavor that smothers your taste buds with hints of gingersnap cookies and spices. Other brands such as Trader Joe's, Steve's, and Ben & Jerry's really missed the mark when it comes to truly replicating that cookie butter flavor.
The Italian butter cookies are incredible. What boggles my mind is how fresh they stay when frozen in ice cream. Cookies can turn to rocks when frozen in a dessert, but Clementine's still provide a freshly baked texture when biting into them. Italian butter cookies are made of flour, sugar, eggs, and butter they are a very simple cookie yet executed to perfection. The soft texture of the cookies leaves a luscious shortbread flavor when you bite into them. The flavoring is not too sweet but has enough punch to really add a great flavor to the dominant ice cream base.
Italian Butter Cookie is a re-scoop for me, but a flavor that shines atop Clementine's lineup. Not only was it simple on paper, but this was also built to perfection. Two simple elements that are tied in to create a fantastic combination. An easy flavor to round out a 4/6 pack flavor.
