Salt & Straw Ras el Hanout & Pickled Rose Petal Jam
Salt & Straw Ras el Hanout & Pickled Rose Petal Jam is labeled as: "a mixture featuring nutmeg, mace, ginger, and a whole spice market full of flavor. The spice is balanced by a pickled rose petal jam, made by lightly pickling fresh rose petals in white wine vinegar and lemon juice before cooking down with sugar." Typically flavors like this do not pique my interest, but there was some great feedback from the shops and online. On paper this looks very simple, but knowing how well S&S executes flavors this could be a sleeper.
This base is a pure and luscious vanilla. Upon first bite it reminded me Almond Brittle & Salted Ganache and how dense the ice cream truly is. The kicker here was the added spices in the ice cream. At first bite you don't really pick up on them until it hits your taste buds into the after taste. The ginger and nutmeg are subtle, but just present enough to mesh with the premium base. The mace, vinegar, and lemon juice are all very hard to pick up on. The zest seemed muted as you made way through your experience on this pint. The way all of these flavors combined together was extremely refreshing and absolutely hit the spot. This was one of the most unique bases I had from Salt & Straw because of the fantastic vanilla that is thrown together with so many complimenting ingredients.
When it comes to swirls we should know Salt & Straw is on top of the game. The pickled rose pedal jam tastes like fresh strawberry jam. The sheer amount of flavor was incredibly delicious and wanted you digging in for more. If you look close enough you can see small seeds laced throughout the swirl. Not only was this swirl consistent from top to bottom, but it turned into a huge glob come the center of the pint. The quality of the swirl you can tell came from fresh grown ingredients that were modified to Chef Renee Erickson's famous dish from Seattle. This was the best swirl of the bunch when it came to the Chef Collaboration series.
Overall this is a very straightforward flavor but S&S delivered on the execution. The base was top tier and the swirl left a lingering flavor on your taste buds in every single bite! At no point do the spices overpower the base, and the jam swirl provides the perfect match for all the spices provided in this offering. If you like a very refreshing and unique flavor this one is for you
