Roasted Beets & Hamoboldt Fog is labeled as “beets, goat cheese, and apples. While candied walnuts shotgun themselves through both layers alongside a punchy swirl of bright beet and apple jam.” Being a person who is not one to enjoy beets the mix-ins sounded very unique. I am quite curious how this sweet and savory combo would play out. If there is a swirl included you know one thing Salt and Straw will go big!
Upon taking my first bite I was surprised that this was not very heavy in beets flavor. Instead you get a lot more goat cheese with the dual colored looking base. I by no means am complaining but expected a complete 180. What is interesting is how well both flavors mesh together. A light and mild beet flavor with an explosive goat cheese that packs a punch. I am not a big savory guy when it comes to ice cream, but Salt and Straw made this one work and executed it well.
The mix-ins are where Salt & Straw will blow you away. Since everything put into these pints is handmade the quality of the apple jam swirl is top tier. The jam is pure, bold, and has an everlasting aftertaste, but the only swirl I got was in the first few spoonfuls. This was the smallest swirl I have ever experienced from Salt and Straw which was a smidgen of the pint. The walnuts are bite size which is the perfect size and texture to enjoy in ice cream. Consistency is a trademark of Salt & Straw, but that was not the case here. I was hoping to see as much swirl as Duckfat and Brown butter, but the same situation followed suit with the candied walnuts.
This pint took me by surprise. I really thought it would pack a lot of beets which was not the case. The goat cheese is the dominant flavor but the lacking swirl is what hurt this pint. I got no where near as many candied hazelnuts as others who did order. Sometimes that is the luck of the draw with ice cream and consistency.
