Duck Crackling with Cherry Preserves:
Duck Crackling with Cherry Preserves is labeled as “Rich ice cream made with duck fat, molasses, and salted custard, then swirl through three delicious additions. Tart Cherry preserve, candied duck skin brittle, and a super funky local honey gastrique.” Going into this pint I expected the base to be solid made from a very flavorful ingredient in duckfat. The real question is how everything else pairs with it.
When I took by first bite I expected the flavor to be dense, and that it was. I have had duckfat on burgers and in regular restaurant dishes, but this tasted like an upgraded sweet cream/vanilla base. The biggest aspect you will notice is how bold it tastes. Due to the fat content and the flavor of duckfat the base alone is worth scooping as it is extremely pure and true to its name. The molasses and salted custard in the description were very faint, but yet noted. I would of liked to of seen these peek through a lot more in each and every bite.
The candied duck skin brittle tasted like a rich and crunchy toffee. When you bite into it the crunch is strong and the flavor is what you would expect from a handmade mix-in. The buttery and rich aftertaste from the toffee crunch is fantastic with how premium the base ice cream is. Last but not least the tart cherry preserve (swirl) is everywhere. The further you dig the larger it gets. While that is never a bad thing it got to the point where I ate a spoonful of pure swirl as my very last bite. The cherry is rich (not overpowering), but strong enough to go hand in hand with everything encompassed in this pint.
This is yet again another fantastic flavor from the Chef Collaboration series. When it comes to ice cream I usually stick to very basic peanut butter, chocolate, caramel, and other candy based flavors. Reaching out and trying these innovative creations has been an eye opener as to how flawless Salt & Straw is when it comes to execution. A job very well done.
